Thank you for the recipe. I just finished making it.
I always wonder what japchae tastes like and fortunately it worked out well.
I did change a few things about the recipe though:
I bought Chinese sweet potato vermicelli instead of korean vermicelli. My noodles are darker than the ones shown, maybe it’s because of that. Also, instead of dried shitake mushrooms I used fresh shitake mushrooms. The flavour is not that pronounced so next time I will buy the dried ones.
It looks really colourful and just as I hoped.
As for the flavour, personally do not really like too sweet dishes so for my next try I’ll add a bit of red pepper and another garlic to make it more savoury. I’ll also fry the carrot a bit more to soften it to my taste.
NO TASTE TEST FROM THE KIDS??? :'( :'( :'(
My husband likes japchae without sesame oil, too. I add mine after he gets his.
This recipe looks wonderful, I really love it. Im not vegetarian but I would love to try this
Looks soooo delicious and colorful! I have the noodles and I think I will make japchae this weekend. I like that you cooked the noodles in the sauce afterwards. I usually just add the sauce to the cooked noodles but I want to try your method. I will let you know how it comes out! 🙂
Looks very tasty! Will try it this week for sure. 🙂 Thanks!
More please! Love Korean food but I’m vegan.
This looks delicious. I will try making it someday 🙂
Thank you!

Looks delicious Aeri nice and healthy.
Oh that sounds delicious. I’m not vegetarian/vegan myself, but I’m not a big meat eater either so this recipe is excellent. Great work as always Aeri!
Thanks for this vegetarian recipe.
Can o make this the night before a party or does it have to be made fresh?
I underestimated how long it took to prepare this dish. It took me almost an hour and a half including preparing the egg strips. I like some protein with my food. The final result was a tad two sweet for my taste. I found it a little too greasy too. The amount of spinach was too little compared to other veggies. Overall, it was a delicious meal. I like that it is packed with veggies. But I probably wont make it again in the near future since it is too much work.
