Roasted Pork and Vegetables

2 to 3 pound pork loin
6 medium potatoes, cubed
6-8 carrots, peeled and sliced
1 medium onion, sliced into wedges
2-3 Tablespoons olive oil
2 teaspoons thyme
2 teaspoons rosemary
2 teaspoons salt
1 teaspoon pepper
Preheat oven to 450 degrees.
Place pork loin in center of baking dish or roasting pan. Add potatoes, carrots and onions around pork loin. Drizzle olive oil over pork and vegetables. Sprinkle thyme, rosemary, salt and pepper over pork and vegetables.
Roast for 45 to 60 minutes or until a meat thermometer reads 160 degrees or pork is not longer pink.
Let pork rest for 5 to 10 minutes before slicing.

Looks so easy and great for fall. It would be easiest to put all the chopped up veg and oil and seasonings in a big bowl, toss well and then arrange around the meat – will make this soon!
