Traditional Giblet Gravy Recipe for Thanksgiving

I showed you a shortcut recipe for this southern giblet gravy last year. Here is my traditional recipe for a larger crowd. I hope you can give it a try for your Thanksgiving dinner.

Traditional Giblet Gravy Recipe

Turkey Giblets and Neck
8 – 10 Cups Water
4 Stalks Celery
2 Onions
3 Carrots
2 Bay Leaves
3 Whole Cloves Garlic
Salt & Black Peppercorns

1 Finely Chopped Shallot
2 – 3 Tbsp Butter
1/2 -3/4 Cup Turkey Drippings
1/3 – 1/2 Cup All Purpose Flour
3-4 Cups Stock
Chopped Giblets & Neck Meat
Salt & Pepper
1/4 Cup Heavy Cream
2 Boiled Eggs
2 Tbsp Fresh Parsley or Chives
