This quick and easy recipe is THE BEST VEGAN MAC AND CHEESE RECIPE EVER! It’s completely OIL FREE , (can be made gluten free), and HEALTHY!
2 cups diced potatoes
1 cup diced carrots
1/4 cup diced onion
2 cups nutritional yeast (save 1/2 cup for end)
1tbsp garlic powder
1/2 cup of water from the pot (used to boil veggies)
1/3 cup plant based milk
Juice from 1/2 a lemon
1/2 tsp paprika
1 tsp mustard
1/2 tsp sriracha
1 tbsp tomato paste
1/2 tsp each salt and pepper
1tsp tapioca starch
450g macaroni noodles
– Boil diced potatoes, carrots, and onions in a small pot until tender. Don’t throw away the water! Remove 1/2 cup of water from the pot, then drain the rest. Put all contents Including 1/2 cup of water into the blender.
– Then add 1.5 cups of nutritional yeast (save the other 1/2 cup to add at the end), garlic powder, lemon juice, and plant based milk. BLEND!
– Once cheese sauce is blended smooth, pour 2 cups of sauce into a pan and keep warm on low heat. Add paprika, mustard, sriracha, salt and pepper, and tapioca starch. MIX!
– Cook your macaroni noodles, drain, and add to the cheese sauce pan. Mix and add the remainder (1/2 cup) of nutritional yeast.
*Adjust flavours to your liking! (more nooch the better 😉 )

Not a fan this of this one. I tried the basic recipe that’s out there without Maddies additions at the end, and to me it just tastes like potatoes and carrots. There’s a better cheesier tasting recipe (in my opinion) that has cashews and oatmeal in it. Made it in the Vitamix, it cooks in about 5 minutes. I got it from Jill Mckeevers site (Simple Daily Recipes). ,

Ok I deff need to re try this your way then. The other day for the first time as well I made vegan Mac and cheese but it was with cashews (plus the carrot, potato, onion, and nutritional yeast) and it was SO bland and not even satisfying, I couldn’t even finish it. I said to myself what a waste I’m never making this again. But yours looks like it has potential for me to attempt again! Haha

I think cashew cheese taste better than the one with potatoes and carrots and onions. I tried that recipe from hot for food and I really disliked it. I couldn’t even eat more than a bite because it just didn’t taste right. Why can’t you make mac and cheese the old fashioned way but with vegan ingredients? You make a roux with flour and vegan butter and then add soy or almond milk and boil til thick. Then you add in your favorite vegan cheese. I prefer the Chao one. I think that would taste more authentic.
