For the meat:
4 lb (1.8 kilos) beef chuck steak
5 guajillo peppers
2 anchos peppers (optional)
2 to 4 cloves of garlic
1 onion + 1/2 onion
5 bay leaves
1 teaspoon oregano
1 teaspoon thyme
2 whole cloves
Salt to taste
For the sauce
1 lb (450 g) red tomatoes
1/4 lb (220 g) green tomatillos

To serve tacos or consomé:
Chopped onion
Chopped cilantro

Do you take the seeds out of the Arbol chiles?

marjoram tbs
thyme 1 tbs
onion 1 whole
garlic to taste ( i use about 3 cloves or more)
salt to taste
bay leaf 2
after the meat is tender remove it from the broth (2-3hours). Add guajillo chiles (3-4 per lb of meat) boil til soft. add garlic, clove (2) pimientas (small 2-3 large 2) broth and chiles (enough to cover chiles) in a blender. Blend til smooth (2 min) while blending strain broth. discard “mess”. return broth to pot and strain sauce into broth. shred meat and return to broth. serve on tortillas or as a soup. garnish with onion, radish, cilantro.

lightly fry 1 package of chiles de arbol in about 1″ of oil (DO NOT BURN) add chiles and oil to blender with garlic, pimienta (L&S) bay leaf, mexican oregano blend til all chiles are ground. use on tacos or in the soup.
