Kholodets (Aspic) – Russian Meat Jelly Video Recipe

Aspic is a dish in which ingredients are set into a gelatin made from a meat stock or consommé. Non-savory dishes, often made with commercial gelatin mixes without stock or consommé, are usually called gelatin salads.

Ingredients:

Beef
Bones
Couple of hard boiled eggs
Salt
Black Pepper (Optional)
Minced Garlic

Procedure:
1. Simmer the meat with bones for about 5-7 hours.
2. Remove the meat and mince it, while seasoning it and the broth.
3. Place the meat evenly in a container and fill it with the broth and cool to room temperature.
4. After it reaches the room temperature, store it in a fridge until hard!

Когда я работал в русском ресторане и делал много холодца, то я его еще очищал белком и фаршем.Погуглите “консоме ” . Получается абсолютно прозрачный бульон.
