Other short or medium grain rice will work. Yes, the vinegar is お酢 and it’s a typical rice vinegar.

Sushi Rice
1 cup medium grain rice
1 1/4 cup water
Vinegar Seasoning (don’t over mix)
3 Tbs Rice Vinegar
3/4 Tbs Sugar
1/2 tsp Salt

We do this a lot in my house, but I didn’t know there was a special kind of vinegar for sushi! We just used rice vinegar without sugar or salt. I will try it this weekend, thank you a lot!
