What is a good method to slice the cucumber very thin? Is it a technique or rather dependent on the type of blade the chef uses?

Try using a vegetable slicer. All you need is a basic plastic one that is inexpensive. Or you can just try slicing it really thin with a regular knife which is not impossible 🙂
