I just made this and it is WONDERFUL. It is very different than American potato salad, but I like this a million times better.  It seems less heavy, with a cleaner and fresher taste.  This is perfect for bento, which I’ve also recently started.  I took some to my parents and they loved it too. Thanks for the recipe!

I went for a home stay with a japanese family. And i saw a similar one too! They used mashed pumpkin, mayoniese and some diced onion! Gosh its so nice!!!!

I go lazy with veges when making potato and use mix frozen veg, the ones with chopped carrot and corn ect. Plus chopped ham and egg 🙂 yummy!
