I wonder if soaking the beans in water overnight (at the initial step) rather than the sugar mixture will inhibit the penetration of flavor into the beans. I feel that sometimes once a bean has been soaked in water, it is not quite possible to “replace” the taste inside the beans unless the soaking of flavored liquids are super extended.
