1/2 cup (90g) flour
3 tbsp sugar
1 pinch salt
1/4 tsp baking soda
3/4 tsp baking powder
3 oz (90ml) milk
1 tbsp(10g) butter
1/2 tsp vanilla essence
1/2 tbsp lemon juice
Grease 2 ring molds with butter and set aside. Put lemon juice into the milk and set aside. Melt butter in the microwave.
Sift flour, baking powder, baking powder and salt into a bowl and combine well. Separate the eggs. Beat egg whites in a bowl until frothy. Add in 1/2 tbsp of sugar and beat for a minute. Add in 1 tbsp sugar and beat until stiff peaks.
Combine egg yolks and the remaining sugar and mix until smooth. Add in the milk mixture, melted butter and vanilla essence and mix well. Then add in flour mixture and mix until smooth. Fold in one third of the egg white mixture and mix until combined. Add in the rest of the egg whites and fold in until just combined.
Lightly grease your frying pan and turn on the heat. Add in your ring molds. Cool your hot pan briefly on a wet towel. Turn the heat back on and pour batter into ring molds, filling them about halfway. Cover and cook for 15 minutes on low heat. Flip and cook for 10 more minutes on low. Carefully peel off molds and transfer to a plate. Serve with butter and maple syrup. Enjoy!
