Dashi is the most important ingredients for this dish, so you should not skip it. For sake and mirin, you can use one or the other, and if you don’t use mirin, you need to add a bit of sugar for sweetness. This is a very delicate flavor dish, so we highly recommend to follow our recipe to get the best result.

if you don’t have a steamer like me, you can just fill a baking tray with water and put the cups on the baking tray, and then “bake” in the oven. i did it several times and it worked very well 🙂
