Fried Scotch eggs with Italian sausage, traditionally a British recipe that’s evolved all over the world. It’s a perfect meal or a great picnic snack. You can have the yolk runny or boil them hard, it’s up to you. I know I prefer runny. Buy good quality sausages as this makes all the difference, you want spicy, with herbs and garlic. This makes or breaks it, so buy from a reputable supplier you trust. They should be well seasoned and generally you don’t need to add extra salt or pepper. You can serve them for breakfast with grilled tomatoes or anytime, just arrange them with pickles and a dipping sauce such mayonnaise, tartar sauce or even ketchup.
