If you have unexpected guests and you don’t know what to cook, surprise them with a great pasta dish, the penne arrabbiata… let’s cook it together!
Penne arrabbiata
(4 servings)
• 14 oz (400 g) of ridged penne pasta
• 2 cloves of garlic
• 4 tbsp of extra virgin olive oil • 1 cup (100 g) of grated pecorino romano cheese
• 2 red chili peppers or chili powder
• 1 2/3 cups (400 g) of ripe tomatoes
• 3-4 tbsp of parsley
First of all, blanch the tomatoes in boiling water for 2-3 minutes; then drain and allow to cool a bit, and now remove the skin and the inner seeds… after that cut into cubes.
Now move on to the sauce, meanwhile start the water for the pasta; so add the oil to a pan… the cloves of garlic — add them whole, if you want to remove them later, or crushed, as you like — and of course the chili pepper — I am using fresh chili peppers, but chili powder is fine as well. Let it brown for a couple of minutes.
Now add the tomatoes… stir a bit and cook for 5 minutes, in the meantime salt the water… and boil the pasta.
The pasta is ready, and so is the sauce, that has been salted, so remove the garlic… drain the pasta and toss in the pan… stir… and sprinkle with plenty of chopped parsley.
The penne arrabbiata is ready to eat, grate the pecorino cheese over the top… and buon appetito!

Absolutely revolting. I truly hope it was me that did something wrong (apart from the fact that I had to guess the amount of chili powder since it’s not mentioned). Would not recommend.

I’m Italian and I have to tell you
that this pasta all’arrabbiata seems good, but you can’t put parmesan or any other kind of cheese over sauces made with garlic like this one.

With cooking, you can do it however you like–that’s the art and the beauty of it. It would not be “traditional” but it would sure taste good with ground beef!

Coming from a chef, they made this a lot more complicated than it should be. I’ve made this dish many times & there are easy shortcuts that cut the cooking time in half

Wow you lost so much weight. U didn’t have to. So u know english as well?!! I did some recipes from Giallozeff. learned some Italiano (very close to my native language, another romance language).
American tomatoes taste like cardboard. Use a 28 oz. can of crushed tomatoes instead, and cook for 15 to 20 minutes. Delicious! (You can omit the cheese if you prefer the dish spicier.)
please dont bash this lovely lady. i like the way she did this vid. unlike other instructional vids and that goes for any category.. she didnt do a whole lot of unnecessary yapping. she got straight to the point and wasn’t trying to be a movie star. i hate watching vids like that.

I’ve done it twice Sonia but I’m using spaghetti and parmesan cheese. No choice. Can’t find pecorino romano. It’s light compare Bolognaise. I like it for dinner since it was light. Can I use the sauce for Bolognaise too?

The Bolognese ragout is made with ground meat and tomato paste, so it’s not the same… but you can make the arrabbiata sauce tastier by adding meat or bacon!
