1 onion finely chopped
1 tbsp celery
2 tbsp garlic
2 tbsp parsley
2 tbsp chives
1 cup arborio rice
1 tbsp butter
3 cups veg stock
11/2. Cup chopped mushrooms (shiitake button etc)
Salt and pepper to taste
Parmesan cheese
2-3 tbsp soft cheddar or fresh cream

– In a pan heat olive oil and some butter, sauté some onions and then add garlic and celery

– Add arborio rice and mix well, then pour some vegetable stock until the rice cooks

– Soak shikaki mushroom in water for 20 mins, then add the water to the rice

– Add both the cheese and stir well, salt to taste, pepper, chives, parsley

-Roughly chop the shikaki mushroom and chives

– Heat some butter in pan add the mushrooms and toss, cook for 3-4 minutes

– Add the mushrooms to the risotto

Mushroom Risotto is ready to be served!

Mushroom risotto is my all time favourite and I’m glad you said this is your take on it… It’s close to the traditional way but in no way the traditional way of making risotto… however, I would like to make a suggestion for you. The next time you cook risotto… make sure the final product has a more creamier feel… it should be in between a porridge and a regular boiled rice consistency.. so a bit more stock right at the end and leaving it to sit off the heat for few minutes will make a big difference to the final product. Also you should try frying the mushrooms with a bit of garlic butter instead of just plain butter..I promise will never go back. Thanks 🙂

my darling that’s no way of cooking risoto as in Italian way. I’m so disappointed the way you cooked and teach people that’s it’s an Italian mushroom risoto. it’s look more Indian mushrooms rice pulao then the Italian risoto.

I’m sorry this is not Risotto..The rice is all wrong for a start no self respecting Italian would use Arborio rice Carnaroli or Vialone Nano are the only grains for this..For goodness sake don’t put Cheddar in it, and if you’re doing a fish Risotto don’t use cheese ever that’s a cardinal sin.Wine generally is a must there will be no alcohol in the finished dish..The other thing is it should be fairly loose not stodgy but more thick soup like..Always let your Risotto sit for 5 mins before serving as it does need to relax and finish it of with butter and lots of Parmesan..Anyone who really wants how to cook this properly let me know and I will respond
