Matt Pasquale’s Kitchen Express | Pizzaioli | Italian Food | Recipe | Fidel Gastro

Matt Pasquale is back again and in fine form. In the last Kitchen Express video Matt Pasquale showed us how to make an epic Chicken Cacciatore. In this episode he unveiling the secrets of Pizzaioli.

Just in case this is the first Matt Pasquale video you are tuning in for here’s a bit of history. Matt was fascinated by cooking shows as a child, even more so than cartoons. There were many that he enjoyed but none as much as Pasquale’s Kitchen Express. Pasquale was not only a gifted chef and TV personality, he was also an impressive opera singer. As a result of his love of the opera it was not uncommon for him to burst into song while cooking. He brought an element to the typical cooking show that had simply not been seen before and naturally his success followed.

Matt has developed Pasquale alter-ego based on Pasquale’s Kitchen Express show. If you have ever seen the original you will notice right away that Matt definitely took a lot of time and effort to faithfully recreate Pasquale’s legacy.

The dish featured in this episode is known as Pizzaioli. This is a dish derived from the Neapolitan tradition that features meat (often less expensive cuts of meats like steak and chicken) cooked with, olive oil, garlic, tomatoes and white wine just long enough to tenderize it. Almost all versions of the recipe also include oregano, tomato sauce, and basil.

While this dish does share a tomato base with Pizza, as well as some similar spices that is where the commonality ends. It does somewhat resemble what many have come to know as a meatball sub, with some key differences. All differences aside this dish is a quintessential example of Italian food and looks to be tasty beyond measure.
