Preparation time: 35 minutes.
Difficulty: Easy
Calories per serving: about 120 kcal.

Ingredients for 6 people:
1 kg of tomatoes (vine tomatoes)
3 onions
4 cloves of garlic
Olive oil
1 bunch of basil
1 ciabatta

Dice the tomatoes. Chop the onions finely (or coarsely, it depends on your taste) and add to the bowl with the tomatoes. Peel and press the garlic (only three cloves) and drop in the bowl. Season with salt (preferably ground sea salt) and pepper. Leave to stand a few moments and then fill it with olive oil.

Sprinkle the bread with a few drops of olive oil, rub with the remaining garlic clove and slide it into the oven (only bread) at about 200 ° C. Remove from the oven once crispy (this takes about 8 min.). Finely chop the basil and place in bowl with the tomatoes, garlic and onion to season.

Place everything on the table and serve – if you like, try adding mozzarella or Parmesan cheese.

Love the recipe. Do you have any idea of how many slices of ciabatta i can fill up with this amount of tomato. 1kg sounds like much and dont need to make food for a full army.

Can i use mint instead of basil in the recipe ?

NSIEGS94 says:

I tried bruschetta for the first time yesterday. I’m not usually a fan of eating tomatoes in any other form than sauce, but I was surprised by how good it was.

When I was on vacation back in late May, I went to this Italian restaurant and was served a small platter of bruschetta. Having never had it before, I gave it a shot and it was rather delicious. I want to make this stuff myself one of these days and enjoy it again.

Interesting that it is baked bread and not grilled. More even toasting. Love the olive oil and rubbed garlic. Some people salt their bread also cracked sea salt.

I had this when my family was in Tuscany at some mom and pop shop. I never got to chance to eat it since but this dish is surprising very good.

kbarb1000 says:

I have been fermenting garlic and delighted with the results. Just peel your garlic and cover with a salt brine. The reason I bring it up is i Toasted some bread in the oven, spread it with coconut oil and tomatoes on top and poured on the garlic brine. Soooo delish.
