I’m quite surprised that you got so many good tips about this recipe, but then you failed one of the easiest and common steps.. 😛 it is very important for this recipe (and for any pasta which has a sauce that is based only on oil), to toss the pasta into the condiment pan and then add parmesan and the other things and flip it for a couple of minutes. works best if you add some more water in the condiment just before you drain the pasta, and then in that couple of minutes the pasta will absorb it, along with some of the condiment, and the starch will create a sort of oil cream! 🙂 oh, and pasta shouldn’t be rinsed, for sure, but another “religious” rule is to put a couple of spoons of salt into the water, rather than adding salt in the end. the flavour is just like if it was a different product! 😉

I’m Italian, and I’m sorry to disappoint you…
This is not an Italian dish… it’s half of it.
You’re missing the peperoncino (chilli) part.
The name is “pasta aglio olio e peperoncino” and you don’t need any cheese, nor pepper, nor celery.
the recipe is almost right, but you should fry the chilli too together.
please, never ever put any kind of cheese on pasta aglio olio e peperoncino, as the hot part will be ruined by the cheese (it’s a known fact: if it’s too hot eat milk or eat cheese and the burning sensation will wane).
In the end, just stick with the original. You just need pasta, salt, olive oil garlic and some good fresh chilli.
