Gravy is a sauce which is thickened by some type of gluten (corn starch, flour).
Sauce can be either gravy or cream or tomato etc. usually thickened one way or another by reducing or adding starch etc. although most people call gravy a meat flavored sauce, not generally tomato or cream.
Demi glace is thickened by stirring in cold butter (no flour).
