Cooking Traditional Hyacinth Beans Curry / Val beans Recipe / Hitikida Avarekalu Saru
Traditional Hyacinth Beans Curry or Hitikida avarekalu saaru is a native food of Karnataka(India). The Special Curry is made from removing the skin of the Hyacinth beans.
Avarekalu is also known by such names as field bean, flat bean and Indian bean.
Its typical season ranges from November to February.
Preparation:
Separate the seeds from the fresh hyacinth beans.
Soak peeled beans in water for 10-12 hours.
After 10-12hrs seeds will become soft and then remove the outer skin of the seeds and set them in a bowl.

Then use these seeds to prepare the curry using Onions, Coriander, Grated Coconut, mustard, tomato,garlic,ginger and oil.
When this recipe is prepared using firewood, the aroma and taste of the curry will double and its an treat to your taste buds…
