If there’s one recipe you’ll ever want to have in your repertoire, it’s a super savory and decadent Mac and cheese. Mine starts off with by making a classic white sauce and giving it a few insurance policies to make sure all goes well: I add tons of cheese, I flavor the sauce, and when the sauce is thick and luscious, I mix in a little sour cream…it adds a great tang and keeps everything nice and creamy. Trust me when I say this: this is the only Mac and cheese recipe you’ll ever need.

Ultimate Baked Mac and Cheese
4 cups of cooked pasta (I used gemelli and rotini – so ghetto, I know – it’s all I had left)
2 tablespoons of butter
2 tablespoons of flour
2 cups of half and half
1 teaspoon of salt
1 teaspoon of pepper
1 pinch of garlic powder
1 pinch of onion powder
2 cups of shredded cheese – your choice (for this, I used what I had left over Gouda, Velveeta, Cheddar, and Mozzarella)
1/2 cup of sour cream
*shredded cheese for topping
1. Preheat the oven to 400 degrees.
2. Using a Dutch oven or large pot,
Melt 2 tablespoon of butter.
Then stir in the flour and cook
for about 60 seconds constantly
stirring.
3. Add in half and half and continue to stir periodically while on high heat. When the mixture comes to a boil, it should start to thicken.
4. Fold in cheese, salt, pepper, garlic powder, onion powder and sour cream.
5. Allow the cheese to melt down into a smooth sauce. This should take about 3 minutes on low heat.
6. Fold in cooked pasta, shrimp, and bacon into the sauce and ensure the mixture is well incorporated.
7. Pour into a baking dish and top with more shredded cheese.
8. Bake until golden brown and bubbly. Enjoy warm!
Try a block of cream cheese in the milk to melt it. The BEST!!!!
