Vermicelli Pulao| Breakfast/Brunch Recipe| Vegetarian/Vegan

Vermicelli Pulao is a spicy/savory preparation in which roasted vermicelli is with vegetables and spices. It is an alternative to the regular pulao made with rice. Besides, it is a delicious vegetarian/vegan meal option.

Ingredients for Vermicelli Pulao:

Roasted Vermicelli – 1 ½ cup;
Onions – chopped, 1 ½ cup;
Ginger paste – ¾ tbsp;
Garlic paste – 1 ½ tbsp;
Spices – 6 cloves, 1″ piece of cinnamon, 1 tsp cumin seeds, ½ tsp each of turmeric powder and red chilli powder(or as per taste), 1tsp coriander powder, 1 ½ tsp garam masala powder;
Mixed vegetables – 1 to 1½ cups (chopped green beans, frozen peas, carrots, bell peppers/capsicum etc.)
Tomatoes – crushed/chopped, ½ cup;
Coriander leaves/cilantro – finely chopped, ¼ cup;
Salt to taste
Cooking oil – 2 to 3 tbsp;
Water – 2½ to 3 cups.
