2 Slices of Sourdough Bread
60 g Chorizo
1 Ripe Avocado
Splash of White Wine Vinegar
Salt and Pepper
STEP 1: PREPARE AVOCADO
Peel, half and destone your avocado and scoop the flesh into a small bowl. Mash with the back of a fork until almost smooth, season with salt and pepper and stir through the juice of half a lime. Leave the stone in the avocado to stop it browning.
STEP 2: POACH EGGS
Bring a pan of water up to a gentle simmer. Add a shot of white wine vinegar. Break your egg into a small bowl and gently lower it into the simmering water. Lift off the bottom with a slotted spoon to let it set for a few seconds. Leave to poach for 2-3 mins.
STEP 3: CHORIZO AND BREAD
While the egg is poaching fry your chorizo in a little oil until it starts to crisp up. Toast your sourdough bread.
STEP 4: ASSEMBLE AND ENJOY
To assemble divide the smashed avocado between the two bits of sourdough, Scatter over the chorizo and top with the poached egg. Drizzle over some of the chorizo oil. Scatter over some chopped coriander and give the dish a final season of salt and pepper.
