To my husband’s Alabama family “hash” has 3 basic ingredients that you scramble in a cast iron skillet: ground beef, small (about 1/2”-inch) cubes of potatoes (usually white or russet), & sweet Vidalia onions (minced about the same size as the potatoes, so they will cook evenly.) That is all!
Scramble on medium heat, in a little bit of oil, turning everything together with a spatula enough, till they turn a nice, golden crispy brown.
Add salt & pepper to taste, then add Heinz’s ketchup! Yuuuuum!!!!!
