• 8 ounces – breakfast sausage
• 2 Tbs – unsalted butter
• 2 – finely chopped green onion stalks
• 1 – finely chopped celery stalk
• 1/4 cup – finely chopped green pepper
• 1 tsp – minced garlic
• 1/4 tsp – red pepper flakes
• 2 cups – V8 original tomato juice
• 2 Tbs – heavy cream
• 1/2 tsp – garlic powder
• 1 tsp – dried basil
• 1 tsp – prepared horseradish
• 1/2 tsp – salt
• 1/4 tsp – ground black pepper
• 1/2 tsp – dried oregano
• 1 – egg yolk
• 4 to 8 – large eggs (1 or 2 per serving)
Optional garnish – dried parsley

2 eggs serving (recipe divided by 4):
