Welcome to my Get Healthy for the Holidays series! Every day this week I’ll be bringing you a new healthy recipe to get you looking and feeling great for all of the upcoming festivities 🙂 Today’s recipe is a gluten-free, vegan savory breakfast recipe with polenta, asparagus, and a super quick lemon basil sauce! Vegan Polenta with Asparagus + Lemon Basil Sauce
3 cups water
1 cup almond milk
1 tsp salt
1 cup dry polenta
1 tsp vegan butter (optional)
salt + pepper to taste
asparagus, cleaned and trimmed
ground mustard
onion powder
garlic powder
salt + pepper
Vegan Lemon Basil Sauce
3 tbsp hummus
1 tbsp lemon juice
3-4 large basil leaves
1-2 tbsp water
Combine water, almond milk, and salt in a sauce pan and bring to a boil. Slowly whisk in polenta and stir until thickened. About 30 seconds.
Reduce heat to low and cover.
Cook for 10 minutes, stir. Re-cover. Repeat as needed. Polenta needs about 30 minutes to cook from start to finish, so just keep an eye on it and stir occasionally.
Before serving, add butter and season with salt and pepper to taste.

Then steam asparagus then season with spices and salt and pepper.
Finally, blend hummus, lemon juice, and basil until very smooth. About 30 seconds.
Plate polenta and asparagus, then drizzle sauce on top and finish with a touch more black pepper.
If making for a holiday brunch or even as a side dish, try sprinkling on Follow Your Heart vegan parmesan cheese. So good with this recipe!
