SAUDI KABSA MEAT WITH EMAN
كبسه بللحم

INGREDIENTS
600 GRAMS LAMB MEAT WITH BONES
2 TBSP OIL
6 PEELED, GRINDED TOMATOES
3 CHOPPED BIG ONIONS
1 ½ TBSP SALT
1/2 TSP WHITE PEPPER
3 CINNAMON STICKS
6 PIECES CARADAMON
2 DRIED LEMOM
2 TBS TOMATOE PASTE
2 TSP GRINDED GARLIC

1) Add oil and onions in pot and cook till golden brown.
2) Add meat, cinnamon, bay leaves, cardamom, drie lemon, white pepper, tomato paste, grinded garlic in pressure cooker.
3) Add 1 liter of water and cook in pressure cooker for 30 minutes on high heat.
4) Transfer meat to another pot and add rice over meat mixture.
5) Add water till it covers 1.5 inches over the rice.
6) Cover and cook for 40 minutes on medium low heat.
