I do something similar. I use whatever bulk sausage I have on hand (like breakfast or Italian), brown a little bit up with some finely diced onion, mix it with a similar cheese mix (basically cream cheese & whatever other shredded cheese I have in my fridge), and then I use it to stuff either mushroom caps, mini sweet peppers, or jalapeños. If they’re jalapeños, then I also wrap them in bacon & bake em off in the oven or, if we’re grilling, we pop em on skewers and grill. SO tasty. Sometimes we baste in BBQ sauce, too.
While tailgating in college, one of our friends brought bacon wrapped cream cheese and quail breast stuffed jalapeños poppers for the grill. I donno how he managed to make it work (they were whole jalapeño peppers), but they were enormous and GLORIOUS.
